Butter and garlic with glass noodles and prawn

My mom used to make this all the time when I was still living at home. It’s quite a typical Asian dish and you’ll smell overwhelming afterwards. The butter and prawn combination provides a wonderful aroma that draws you towards the dish. This picture was taken from here.

Serves 4 people

Ingredients

  • 150-200g butter
  • large prawns (I used tiger prawns)
  • 4 rolls of glass noodles
  • 1 onion (diced)
  • 1 clove of garlic (diced)
  • 4 tbsp water
  • Salt
  • Fresh coriander

Method

  • Soak the rice noodles in hot water for 15 min
  • Prep prawns *
  • Melt the butter in a pan on stove (mark 4) with garlic
  • Fry the onions in the butter and garlic till golden
  • Cook prawns in butter, garlic and add salt to taste
  • Take prawns out (to avoid overcooking), leave juices and butter in pan
  • Put the soaked noodles into pan and gradually add tablespoons of water while cooking
  • Cook noodles till increased in size and are completely transparent (10 min)
  • Add prawns in for a final stir

Serve immediately and garnish with coriander

Tip* Cut the legs and antennas off the prawns to avoid getting pricked
Use a tooth pick and pull the vein out from the middle back, in-between the segments – this ensures that your dish won’t be filled with sand. Many people dehead the prawns, but I find that you lose the flavour. Don’t be afraid of the head.
